My name is Fabian Ferrada and I'm the owner of Apis Coffee. Our mission is to educate our customers about the spectrum of tastes that coffee can offer when roasted with care.
We aim to refine the palate by introducing the subtleties of lighter roasts, where the nuanced notes of the bean's origin can shine through. By doing so, we not only provide a superior coffee experience but also empower our customers with knowledge, so they can make informed choices and develop a more sophisticated taste in coffee.
The origin story
How did we get here
Apis Coffee's journey began in 2017 after an inspiring trip to Melbourne, Australia, where we were captivated by the vibrant coffee culture and exceptional quality of specialty coffee. Guided by our close friend, a coffee consultant and master barista, we started our coffee journey.
Back in Castle Rock, we struggled to find fresh, high-quality, light and medium roasted coffee locally, prompting us to learn the craft of roasting ourselves. That passion led to the creation of Apis Coffee, where we blend scientific precision with our experience and intuition to deliver exceptional coffee.

Our passion for exceptional coffee drives us to perfect every roast. Using the MCR-1 1kg coffee roaster from Mill City Roasters and the precise RoastPATH system, we control each step of the roasting process to highlight the unique flavors and aromas of our specialty beans.
Combining scientific precision with experience and intuition, we create coffee that stands out for its quality and consistency, a commitment to both the art and science of roasting.
